For the Pork Chops & Zucchini:

1 tsp paprika, sweet or smoked

2 zucchinis, sliced into half-moons

4 bone-in pork chops, up to 1/2-inch thick

1 1/2 tbsp vegetable oil, divided

salt and fresh ground pepper, to taste

2 tbsp butter

For the Garlic Butter:

1/2 tbsp dried basil

1 tsp dried oregano

1/2 tbsp garlic powder

2 tsp dried parsley

4 tbsp butter, room temperature


Sprinkle salt, pepper, and paprika over the pork chops, then rub each until well coated.

Slice a few shallow slits to the fatty part of each pork chop so they won’t curl up when cooked.

Put a large skillet on the stove and turn the heat to medium-high.

Add 1 tbsp of vegetable oil and allow it to become hot.

Add butter and allow it to melt.

Add the pork chops and cook each side for about 5 minutes or until golden brown.

In a mixing bowl, add dried parsley, garlic powder, dried oregano, butter, and dried basil into a mixing bowl. Stir until well blended.

Transfer the pork chops onto a clean plate. Cover them to keep warm.

In the same skillet, add oil and allow it to become hot.

Add the zucchini slices and cook for a few minutes until soft. Season with salt and pepper to taste. Transfer onto a clean serving plate.

Top each pork chop with garlic butter.
