If you are looking for a new menu for taco night, then you should give this Crock Pot Beefy Potato casserole a try. It’s made with ground beef, taco seasoning, cheddar soup, cheddar cheese, and potatoes. And it’s incredibly easy to whip up, just dump the ingredients in your crockpot and forget about it.
This casserole with the combination of meat and potatoes is freaking delicious! I have made this twice already for taco nights, and it was a huge hit! You can even prep this ahead to save time. Peel and slice the potatoes in advance and just place them in a bowl with water. And if desired, you can also cook the ground beef in advance. This recipe is nothing but easy and fast not to mention satisfyingly delicious! It’s so good, I am pretty sure you, your family, and guests are going to love this!
1 pound ground beef
2 cloves garlic minced
1-ounce packet taco seasoning
10.5 ounces cheddar cheese soup
4 c. potatoes sliced
2 c. shredded cheddar cheese
1 c. beef broth
How to make Crock Pot Beefy Potato Taco Casserole
Step 1: Cook the ground beef with garlic until brown. Drain the grease when done.
Step 2: In the bottom of a lightly greased 6-quart crockpot, place the slices of potato. Over the potatoes, evenly spread the ground beef, then sprinkle with taco seasoning. On top, evenly spoon the soup. Across the top, evenly sprinkle the cheese. Finally, slowly pour in the broth around the pot.
Step 3: Put the lid on and set to cook for 4 to 5 hours on low or 2 to 2 1/2 on high.
Step 4: This step is optional but recommended to brown the cheese. In a broiler put the crockpot (if using an oven-safe crockpot) for 90 seconds.
Step 5: Before serving, allow the casserole to cool for at least 10 to 15 minutes. Enjoy!
